Our name "NADAMAN" originates from NADAYA Mansuke, the founder of
our restaurant. Ever since our service start in 1830, we have continually
pursued the taste of the times. The history of NADAMAN that has
been passed down carefully until today first came into full bloom
when Mansuke started "Nadaman-ro," an Osaka cuisine restaurant
based on Nagasaki cuisine. This was a time when Japan had just
opened its doors to the outside world. The food served at Nadaman-ro
was distinctive for blending the Shippoku Nagasaki cuisine: a combination
of Japanese, Chinese and Dutch menus, with Chinese herbal dishes.
In 1919, Duke SAIONJI Kinmochi appointed the chief cook of our
restaurant to serve the Duke's party that was about to visit Europe
to sign the Treaty of Versailles. The Duke's selection of NADAMAN's
chief chef from among the numerous leading cooks of those days
proves his high evaluation of our sincere attitude towards cooking,
which was backed by our outstanding cooking skills.
The footsteps of NADAMAN are not confined to the history of an exclusive
Japanese restaurant, however, but extend beyond as the food culture
leader of Japan.
While retaining its distinguished, historical background, NADAMAN
also seeks to be a challenger: Rearranging the tastes of tradition
to appeal to the modern palate. As our motto: "A long-standing restaurant
is always new" suggests, we are determined to progress steadily into
the future by pursuing the taste and style that match the times,
while retaining the main road of proper Japanese cooking.
Loving the changing seasons of the year, the nature around us, and
the mind and heart of people....Based on such eternal stance and understanding,
NADAMAN is determined to carve out a new history in Japanese cooking
towards the future.
