"My first encounter with cooking was when I helped my relative's Japanese inn my childhood. Even as a child, I was deeply touched by the dishes my uncle made. Always retaining that first impression in my heart, I seek to create dishes that satisfy my guests incorporating the seasonal beauty of Japan, according to my motto of preparing heartfelt dishes that move people."
